Appetizer lobster roll

- Homemade brioche filled with butter-poached lobster, gochujang mayo, sesame pickled cucumber and yuzu confit

3rd serving

Wine: Morgon

Wagyu Tatar

- Tartare on Australian wagyu tossed in onion oil and Appetit's hot sauce

- Served with smoked crème fraîche, pickled red onion and fried onion

4th serving

Wine: Rosso di Montalcino

Beef tenderloin

- With mashed potatoes, sage cloud sauce, smoked apple jelly, dehydrated egg yolk and plate snacks

5th serving

Wine: Birbet

Million Dollar Ice Cream Bar

- Chocolate ice cream with caramel sauce and hazelnuts from Piedmont in a chocolate shell

- Served with vanilla creme fraiche, raspberry coulis and caramelized white chocolate
